These are so good that I use them in place of any "not-allowed" desserts at parties for my son.  He is more than thrilled and devours them.  I will probably use them as his birthday cupcakes this year- I'm sure all the kids will be none that wiser that they are also getting in some zuchinni!

These are so moist and yummy and no one will ever know there is zuchinni in it. I have also used these as cupcakes with chocolate frosting and my son gobbled it up!  He never noticed he had a different cupcake from the other kids.

These muffins are very moist and tasty with a really nice texture.
But try this!! You can make them into a cupcake too!
I bought sides of cream cheese frosting and the coconut from a specialty cupcake shop, and tried it on the muffins.
I defrost the muffins in a toaster oven on low heat first, and then add the frosting.
Sooo good!! You almost feel like you're eating the cupcakes from "Sprinkles"...
I kid you not.
Good job GF  :))
